The concept was to create a series of exhibition cooking areas that fed to a counter that for breakfast and lunch was setup to handle buffet service and as a waiter pick-up station during dinner. The exhibition cooking consisted of three areas; island cooking suite, teppanyaki station and a dual fuel (gas-wood) robata grill.
