Salt+Brine

Location: Alexandria Center for Life Sciences, San Carlos, CA

Market Segment: Restaurants & Cafeterias

Designed to be an amenity food service restaurant for a lab/office building complex. The facility has a 150 seat dining room with a bar that is a café in the morning and a full service bar in the evening. A small serving area allows customers to order from a menu and have food delivered to their table or pick-up a grab and go item. The kitchen is visible through a glass wall behind the bar. To supplement the facility an outdoor bar for after hours service and support of events in the courtyard behind the buildings was provided.

Littleton Dining Facility

Location: Marine Corps Air-Ground Combat Facility, Twentynine Palms, CA
Square Footage: 22,000
Market Segment: Government & Military

A new dining facility at Twentynine Palms replacing two, 40 year-old facilities for enlisted personnel. The dining facility has a seating capacity of close to 750. The building was constructed using a design-build approach and was completed in just over one year. The kitchen and servery were designed to produce and serve 2,200 meals per day and included a fast food carry out area to supplement the main dining facility. The project received a Design Build Institute of America award.

190 Sunset

Location: : Edmonds, WA

Sitting on a sweet spot at the waterfront in Edmonds sits a completely renovated 20,000 sqft Salish Crossing Marketplace where the home to the 230-seated restaurant 190 Sunset lives. The restaurant features an exhibition-style kitchen, a 21 seated illuminated bar serving hand-crafted cocktails, a large deck with fire pits going year road and a private dining room that can accommodate up to 70 seats for meetings and special events.

Evergreen Valley High School

Location: San Jose, CA
Square Footage: 8,000
Market Segment: Education: K-12 / Colleges & Universities

The kitchen and dining commons are in a student union building on the high school campus. The commons has 350 seats and has a combination of indoor and outdoor seating areas. A scramble servery with a variety of stations including one with exhibition cooking gives the students a variety of food items to select from. The main kitchen is also exposed to view for the students to observe food production.

Longboards Pizza

Location: : South Reno, NV

Longboards Pizza is opening at a new location located in South Reno. This new location is taking on a whole new level of their current beach vibe. The location features a large self-serving beer wall with a custom mural, custom made surfboard tables and an expo kitchen so you can see your pizza being made.

Kurtis Arcala Nutrition Services Center

Location: Matanuska-Susitna Borough School District, Palmer, AK

Stafford Design Group was involved in the design of a new central kitchen for a growing school district in Alaska. The district was looking for a design that allowed them to grow from 8,000 meals per day to close to 18,000 meals per day in 20 years. The school district is very large geographically and food is being delivered to schools as far away as 90 miles. The facility has a cook-chill system, centralized bakery, packaging area and warehousing for food and dry products. After construction was complete, the manufacturers were on site providing extensive training on the major systems and SDG provided supplemental start-up and implementation services to assist the owner with day to day operation of the facility.

Porterhouse

Location: : San Mateo, CA

Known for their dry-aging steaks and craft cocktails, Porterhouse relocated from their original location they called home for decades to a larger space that was a former bank and 2 other restaurants. With the relocation they wanted to update their look to an old-fashioned Hollywood theme with original posters of the “Golden Age” and red velvet curtains that create small gathering spaces. The space contains a bar, private dining for 40 and an open dining room with 3 areas that can be converted into smaller gathering spaces.

Rootz

Location: Guam Plaza Hotel, Tumon, Guam

Rootz was formally a 3 meal restaurant that offered a basic breakfast, lunch and dinner menu. The owner wanted to create a new concept and hired a new chef to help lead the development of new menus and work with the design team to create a new kitchen. The concept was to create a series of exhibition cooking areas that fed to a counter that for breakfast and lunch was setup to handle buffet service and as a waiter pick-up station during dinner. The exhibition cooking consisted of three areas; island cooking suite, teppanyaki station and a dual fuel (gas-wood) robata grill. The dining area was refreshed with new tables and chairs and finishes to complete the makeover for the restaurant.

The Reading Hospital

Location: : Reading, PA

The Reading Hospital needed to update an aging kitchen and employee servery. The hospital has 750 beds wanted to convert their existing tray service to a room service concept. In addition they wanted to enhance the employee dining experience by providing a new servery and 300 seat dining room that offered more options than what currently existed. The challenge was working out phasing that kept the kitchen operational during the duration of construction which happened successfully.

Local Point

Location: University of Washington Lander Hall, Seattle, WA
Square Footage: 34,000

Local Point is a dining facility serving a large, new, multi building residence hall complex with a capacity of close to 1,500 beds. The facility has 6 service points dispersed throughout a 650 seat dining room.
